Why does Yahweh count  unintentional failures to keep his commandments as sins? How is that justice?

Isn't it weird that Yahweh was willing to absolve the Israelites of at least some sins as long as they slaughtered animals and poured the blood around the altar? Why not just ask for a heartfelt apology? All-knowing Yahweh would spot insincerity.

Liable to Eternal Torments

[S]o powerful is the influence of this sin of Adam upon the human race, that they all become liable to eternal torments on this account.
